This Spicy Tomato Soup is a quick soup that will be ready in no time, and loved by the whole family!
This is my favorite tomato soup recipe ever! I found it years ago in a Sandra Lee cookbook that I picked up from a bookstore. I love Sandra Lee’s recipes because they are so simple, yet taste like it took hours to make. This recipe was one of those that we had to avoid for so long because of Kelsie’s tomato allergy. Luckily, she isn’t allergic to cooked tomatoes.
Now, I’ll admit this recipe calls for some of those items that I avoid in the grocery store, because condensed anything, unless it’s organic makes me shudder. Have you read the ingredients? I don’t even know what half of that stuff is on the label! Probably because it was concocted in a chemistry lab some place. However, I do slide this recipe into our menu about once a year, because we do love it! Thankfully our grovery store has finally started carrying at least one of these ingredients in organic form, and I say to myself every time I make this, that the next time I’m in Whole Foods, I’m gonna see if they have an organic replacement for the other two ingredients. So far I’ve forgotten every time we’ve made it to WF’s. Maybe one day I’ll remember! If you do happen to find/know of an organic replacement for the other items, please let me know!
This recipe is freakishly simple to make, and requires literally 3 ingredients, plus a seasoning, besides salt and pepper. It’s ready as soon as it’s hot, and tastes amazing with grilled cheese and/or crackers. It’s really perfect for those days when it’s cold out, and you’re looking for a soup to warm up too. Or it’s perfect for when you’re sick, because the spice helps get those sinuses moving.
- 1 15 oz carton organic condensed tomato soup
- 1 can condensed cheddar cheese soup
- 3 cups spicy tomato juice
- 1 teaspoon dried basil
- Combine all ingredients in a medium saucepan over medium heat until heated thoroughly, stirring occasionally.
