The fall season is upon us, and we all know what that means, right?! Crazy pumpkin spice season! I used to be crazy for all things pumpkin spice and then burn out set in.
Pumpkin spice is one of those flavors that just remind everyone of fall and for me, coffee.
I think I had my first taste of pumpkin spice at a Starbucks. It was then that I fell in love with the flavor and began creating all sorts of yummy pumpkin spice treats.
Nothing has changed, I still love it, but don't make everything pumpkin spice flavored anymore.
These pumpkin spice energy bites are gluten free and refined sugar free!
It doesn't take but just a few minutes to put these together, but you'll need about a 10 minute freezer time. You can store these in the fridge or freezer. We like them both ways.
Can you use other spices? (because you don't like pumpkin spice like I do!)
Sure! You can use apple pie spice. Or you can make up your own spice mixture, just cinnamon would be really good.
Can I use another nut butter?
Yes! I love almond butter. Vanilla almond butter would be delicious! Or perhaps you could try sunflower seed butter, if there is a nut allergy.
What other add ins can I try?
Chopped nuts (I'm thinking pecans), dried cranberries, chia seeds, ground flax seeds, or chocolate chips.
Can I use a different flour blend?
I've only tried coconut flour, but I'm sure that you can! Give it a try. If it's too crumbly add more pumpkin puree.
Can I use another sweetener?
Indeed! I love maple syrup, but you can also use honey or agave.

Ingredients
- 1 cup peanut butter
- 2 tablespoons pumpkin puree
- 1 tablespoon pumpkin pie spice
- 3 tablespoons coconut flour
- 1 tablespoon maple syrup
Instructions
- In a large mixing bowl combine all the ingredients, and mix until smooth.
- Line a pan with parchment paper and set aside.
- Using your hands roll out 18 small balls (about a tablespoon each) and place onto the lined pan.
- Freeze for 10 minutes.
Notes
Optional - roll into sugar before freezing.
Store in the fridge or freezer in an airtight container.
