Apple Carrot Raisin Slaw - Vegan

Side dishes don't have to include a stove or a microwave. Sometimes when we are having bbq sandwich's or hamburgers, I like to make this quick and tasty apple carrot raisin slaw.  We all love it! It always makes a wonderful breakfast when topped with granola, or a healthy after school snack.

What do you need?
10oz bag shredded carrots
3 granny smith apples, sliced matchstick style
1 cup raisins
¼ cup plain greek yogurt
3 tabelspoons follow your heart vegenaise
3 tablespoons rice vinegar
3 tablespoons honey or agave
½ teaspoon salt
½ teaspoon celery seeds

What do you do?
1. Mix together the vegenaise, rice vinegar, honey, salt, and celery seeds in a small bowl.
2. Mix together the carrots, apples, and raisins. Pour the veganaise mixture over the apples, carrots, and raisins. 3. Stir or toss to coat thoroughly. Cover and pop in the fridge for the flavors to enhance. Or you can serve immediately.

    Looks great! Just an FYI, vegans don't use honey so I would suggest maple syrup. Some like agave.

    There are celery seeds mentioned in the directions but not in the ingredients list...I think they would add a wonderful flavor but how much do you suggest?

      So sorry! It's 1/2 teaspoon celery seeds. I have updated the recipe above. 🙂
