Poor Man's Fancy Potatoes

When I was trying to come up with a name for this dish, I couldn't help but laugh when it came together. I plated these up with butter, sour cream, bacon pieces, and chives. Kelsie said they were "fancy", and the name was born. These potatoes are also known as "crash potatoes", but I like our name better.

This is a super cheap dish to make, all that is required is red potatoes and toppings. Your toppings can make this a side dish, or a complete meal. You could go all out and top it with barbecued meat and have a complete meal. It's up to you!

What do you need?
Red potatoes, we went with two per person, try to pick them all within the same size for even cooking
Olive Oil
Seasonings such as salt, pepper, rosemary, thyme, garlic, onion powder, etc.

What do you do?
Rinse your potatoes and scrub any dirt off that may be on them.
Place your potatoes into a large pot and fill halfway with water. The water should cover your potatoes plus a couple of inches.
Boil your potatoes until they are fork tender. Time will vary depending on the size of your potatoes.
While your potatoes are boiling, line a baking sheet with parchment paper.
Drain your potatoes when they are done.
Dry them off and place them on the baking sheet, leaving enough room in between each one to spread out.
Using a potato masher, or the bottom of a heavy glass cup, mash them one time flat.
Drizzle with olive oil, or use a brush if you want to be more precise.
Season with a generous amount of salt, pepper, and your favorite seasonings.
Place in a preheated 450 degree oven on the top rack and bake for 20 to 25 minutes.
You want the edges browned and crispy.

Serve on the side with your favorite potato toppings, or top the potatoes with your favorite barbecued meat for a meal.

      It's definitely a different take on potatoes. I know we get bored of the same mashed or baked potato.

    My family loves these, we've always called them.....smashed potatoes......I also sprinkle parm cheese on top and sometimes bits of bacon or panchetta. Oh, yum!!!
