Summer Squash and Onion Saute

Nothing says summer like squash! We love it around here and eat it quite often this time of year. I normally fry it, but I wanted to mix things up a bit and saute it this time. I remember running across a recipe a while back, but I didn't save it. (story of my life!) I went off memory the best I could and it turned out delicious! It's so easy to prepare, and it cooks up in a matter of minutes.




What do you need?
2 pounds summer squash, rinsed and sliced with a julienne slicer or cut into matchsticks
1 red onion, thinly sliced
salt
pepper
2 tablespoons olive oil
2 cloves garlic, chopped
¼ cup parmesan cheese
optional ¼ teaspoon crushed red pepper flakes

What do you do?
Heat oil in a large skillet over medium heat.
Add your garlic and if you choose so, red pepper flakes.
Cook for a couple of minutes or until your garlic is fragrant. Do not overcook, burnt garlic is not tasty.
Add squash and onions, cook for approximately 5 minutes. You want your squash to be tender crisp, not mushy.
Stir in parmesan, season with salt and pepper and serve hot.

Note: I did peel my squash, you do not have to! It was a personal preference.
