Low Carb Pizza Topped Roast Chicken Breast

What if you could enjoy low carb pizza without the cauliflower crust? Well you can! This low carb pizza topped chicken is going to be your favorite way to enjoy pizza and chicken! It is sure to be a hit on your next family pizza night!

I kept seeing this all over Pinterest so there is no one recipe that this one was adapted from. I just used them all as my inspiration and came up with what you see below. Juicy chicken topped with melted cheese, pizza sauce, and crispy edged pepperoni's!

What do you need?
Boneless skinless chicken breasts, the same amount of people you plan on feeding
1 jar of your favorite pizza sauce, or garlic infused olive oil
1 package of Applegate Pepperoni's, cut into fourths
2 cups shredded mozzarella cheese
1 cup shredded parmesan cheese
Italian seasoning
Salt and Pepper
1 to 2 tablespoons of olive oil
Any favorite pizza toppings, but keep it to a minimum of less then 4-5, or everything may not fit

What do you do?
Preheat your oven to 350 degrees.
Heat a large oven proof skillet over medium to almost high heat.
Pour in your olive oil and season one side of your chicken with salt, pepper, and Italian seasoning liberally.
Once your skillet is heated, place your chicken in and season the other side the same.
Cook for 4 minutes or until you get a golden brown color around the edges. Flip.
Once you flip the chicken place your skillet in the oven and cook for 15 to 20 minutes or until your chicken is no longer pink.
Remove your cooked chicken from the oven, cool slightly and begin topping your chicken breasts by brushing on your pizza sauce or garlic infused olive oil.
Bump your oven up to broil.
Top your chicken with your cheeses, pepperonis, and any other toppings you have chosen.
Make sure that your skillet is oven safe to 500 degrees, and if not place them in another dish that is.
Put them back in the oven for a few minutes or until your cheese is melted and your toppings are cooked to your liking.

    This looks so yum! At first I was thinking umm my oven doesn't go that high then I realised it my be in Fahrenheit not Celsius!
