Fresh Peach Scones & Vanilla Bean Glaze

Nothing says summer like fresh peaches - and these Fresh Peach Scones & Vanilla Bean Glaze are the perfect summer breakfast or sweet treat!

Ingredients

  • 2 cups plus 2 tablespoons flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/3 cup brown sugar
  • 1 stick butter, cubed, and cold
  • 1/4 cup buttermilk
  • 1/4 cup sour cream
  • 1 egg
  • 2 teaspoons Rodelle Vanilla Bean Paste or Vanilla Extract
  • 1/2 cup fresh diced peaches I did peel mine.

Vanilla Bean Glaze

  • 1/2 cup powdered sugar
  • 2 teaspoons Rodelle Vanilla Bean Paste or Vanilla Extract
  • 3 tablespoons heavy whipping cream

Instructions

  1. Preheat oven to 400 degrees, and line a pizza pan with parchment paper. Set aside.

    Whisk together the egg, buttermilk, sour cream, and vanilla bean paste together in a small bowl. Set aside.

    In a large bowl, combine the flour, baking powder, salt, and brown sugar. Using a pastry cutter, mix in the butter until you have a wet sandy texture.

  2. Pour the wet mix into the dry, and stir to combine with your hands or a spatula. Drop the dough onto a floured surface, and flatten into a 7 inch round disk. Slice into 8 pie slices, and place onto parchment lined pizza pan. Bake for 15 to 17 minutes, or until golden brown. Remove from the oven, and place on a cooling rack to cool completely.

  3. Once cooled, whisk together the ingredients for the glaze, and dip the tops of the scones in. Allow the glaze to set up before serving.
