Brussels Sprouts Salad with Apple, Bacon, Cranberries & a Citrus Dressing

Ingredients

Salad

  • 1 pound Brussels Sprouts, washed
  • 6 slices thick cut bacon, cooked and crumbled
  • 1 honeycrisp apple, diced I didn't peel mine, but you are welcome too.
  • 1/3 cup dried cranberries

Dressing

  • 1 navel orange, juiced
  • 1/2 lemon, juiced
  • 2 teaspoons honey
  • 1/4 cup olive oil
  • 1 garlic clove, chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Whisk together the ingredients for the dressing, set aside.

  2. Start by slicing the sprouts thinly using a mandolin.  Place the shredded sprouts in a large bowl with the bacon, apple, and dried cranberries. Pour the dressing over the top, and toss to coat. Serve immediately or within a couple hours of dressing.
