Cinnamon Maple Granola with Cramberries

This Cinnamon Maple Granola with Cranberries is a delicious and healthy alternative to store bought granola.

Ingredients

  • 2 1/2 cups old fashioned rolled oats
  • 1 cup Planter's mixed nuts (see link above) or any nut(s) you like
  • 2/3 cup dried cranberries
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup maple syrup
  • 1/2 cup oil I used peanut oil, but canola would work too

Instructions

  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper. Set aside.

  2. Combine the oats, nuts, cinnamon, and salt in a large bowl. Stir in the vanilla, maple syrup, and oil. Be sure to coat everything.

  3. Pour onto the lined baking sheet, make sure to create a flat surface. You don't want anything on top of each other. Bake for 45 minutes, stirring every 15 minutes. 

  4. Remove from the oven, and allow to completely cool. Toss in the cranberries, and store in an air tight container for up to 3 weeks.
