  • one smallish potato
  • 2 pounds powdered sugar
  • peanut butter

  1. Peel and chop up your potato.
  2. Boil the potato in water until it's fork tender.
  3. Drain and place into a large bowl.
  4. Mix in one pound of the powdered sugar. (yes, it's kind of liquidy and yucky, just trust me)
  5. Mix in the rest of the powdered sugar. making sure to leave enough to place on some wax paper to roll out.
  6. Once you have mixed the powdered sugar into the potato, and now have a dough like consistency.
  7. Drop onto a large wax papered surface that has been sprinkled with powdered sugar.
  8. Using another sheet of wax paper, place on top of the dough disk, and mash out a little with your hands.
  9. Now using a roller, roll until you have about a 1/4 of an inch thickness.
  10. Spread peanut butter over the whole potato sugar dough. I just sort of plop about 3/4 of a cup on there, and eyeball it.
  11. Roll the dough as if you were making cinnamon rolls.
  12. Make sure to place the dough log onto another sheet of wax paper, and roll up. Cut in half and store in the fridge until your ready to slice and serve.
  13. Store at least 6 hours before slicing.
