Ingredients

  • 4 pork chops boneless, 3/4 to 1 inch thick
  • 1 pound small red potatoes quartered
  • 1 pound fresh green beans
  • 2 tablespoons chopped garlic
  • 3 tablespoons oil divided
  • 1 package ranch dressing mix we use the organic brand from Publix
  • salt and pepper

Instructions

  1. Preheat your oven to 400 degrees

  2. Heat a large oven proof pan, over medium heat. Drizzle one tablespoon of olive oil in the pan.

  3. Season your pork chops with salt and pepper. Place your pork chops in the heated pan, and sear both sides, for just a couple of minutes per side. Remove from the pan, and set aside.

  4. Drizzle the remaining oil on the potatoes and green beans.
  5. Sprinkle the ranch packet over the potatoes and green beans, leaving about one tablespoon for the pork chops, and bake for 20 to 22 minutes, or until your potatoes are fork tender.

  6. Remove the pan from the oven, sprinkle the remaining ranch on the pork chops and bake for 15 minutes, or until they have reached a temperature of 145 degrees.

  7. Allow a few minutes to cool before serving.
