We love tacos and this kicked up taco dish is a family pleaser! These Taco Stuffed Peppers are stuffed with taco meat, rice, and salsa make this ordinary week night dish something extraordinary.
We were trying to come up with other ways to have one of our family week night favorites and my niece told me about how they just stuff peppers with taco meat, and I thought the idea was sort of brilliant! I made them the very next week and the whole family enjoyed them.
What do you need?
5 bellpeppers, your choice of color
1 pound ground beef
1 taco seasoning packet - we use whatever brand I grab from Whole Foods, but Publix has an organic brand as well
2 cups cooked whole grain rice
1 cup cheese
½ cup salsa, any kind that you enjoy
Your favorite taco toppings, such as sour cream (we like greek yogurt) and guacamole
What do you do?
Brown your beef in a skillet over medium to high heat, drain any grease away
Add the taco seasoning and ½ cup water. Allow to simmer until the liquid is absorbed
Mix in your ½ cup salsa and rice, stir until combined
Wash your peppers and cut the stem out of the peppers by inserting your knife tip down in the pepper and cutting around the stem area. I like to cut about ½ out from the stem all the way around.
Clean out the seeds
Stuff your pepper with your meat/rice mix all the way to the top.
Place the stuffed peppers in a 9 inch pie plate *use foil around the peppers to keep them from tipping over
Bake in a preheated 350 degree oven for 20 to 35 minutes or until your peppers are fork tender
Remove your peppers from the oven and top with cheese
You can place your peppers back in the oven, if you want to melt your cheese
Serve along side your favorite toppings
