Years and years ago when the first Transformers movie came out, M&M's® came out with a special flavor for the premiere of the movie. They were strawberry peanut butter, and they quickly became our favorite M&M's® ever. We bought bags and bags of them, and ate them all the time. Then one day, they were no more. We never saw them again. We were sad since they had become our favorite. Unlike the yummy holiday flavors that come back year after year, those strawberry peanut butter ones have never been seen again. Or at least we've never seen them again.
When I made these muffins a few weeks back, we were thrilled to have the flavors of one of our favorite M&M's® again. They taste almost identical to the flavor profile, but in muffin form. And everybody loves muffins! It's sort of like a peanut butter and strawberry jelly sandwich, with a sprinkle of chocolate chips. Delicious, right? Well lucky for all of us they are pretty simple to make..
Strawberry Peanut Butter Chocolate Chip Muffins
Chunks of fresh strawberries, hints of peanut butter, and chocolate chips make these strawberry peanut butter chocolate chip muffins the perfect muffin!
Ingredients
- 2 cups flour
- 2 teaspoon baking powder
- ½ teaspoon salt
- 2 tablespoons ground flax seed = 6 tablespoons water {or use 2 eggs} do this first and set aside
- ⅔ cup peanut butter
- 4 tablespoons melted butter
- ⅔ cup brown sugar
- 1 cup of milk
- ¾ cup semi-sweet chocolate chips
- 2 cups strawberries quartered
Instructions
- Preheat oven to 425 degrees.
- Grease your muffin tin, or place baking cups in muffin tin, and spray them with non-stick cooking spray.
- Sift together your flour, baking powder, and salt. Set aside.
- In a large mixing bowl, cream your peanut butter, brown sugar, and melted butter.
- Once mixed, add your milk and flax egg, and slowly add your dry ingredients, mixing a little at a time until thoroughly incorporated.
- Hand mix in your chocolate chips and strawberries.
- Drop in ¼ cup of your muffin mix into each liner.
- Bake at 425 degrees for 5 minutes.
- At 5 minutes, drop the temperature to 375, and continue to bake for 12 to 15 minutes or until a toothpick inserted comes out clean.
