    Skillet Lasagna

    Lasagna is one of our favorite dishes. However, unless you put it in the crock pot (which I've done, it's delicious, and will be sharing later), it seems to take forever from prep to layering, and then cooking to the dinner table. This skillet lasagna uses oven ready noodles, your favorite sauce. lot's of cheese, and a secret ingredient that will have this on your table in 30 minutes or less. Now that is my kind of lasagna!

    This is perfect for those nights where you don't have a lot of time, your questioning take out, and your kids are hungry. Turn on a 30 minute tv show, pull out a fun game, or put them to work in the kitchen with you, and dinner will be ready in no time flat. You'll be eating something far more healthier than take out, and your family will eat this up.

    What do you need?
    1 pound ground beef
    1 green pepper, washed, seeded, and sliced
    1 onion, diced
    3 cloves of garlic, minced
    1 tablespoon olive oil
    1 jar spaghetti sauce (we use Simply Balanced from Target)
    1 ⅔ cup water
    ¼ Italian dressing (we use Hidden Valley Farmhouse Originals, it's soy free)
    12 oven-ready lasagna noodles, broken into squares
    1 cup shredded mozzarella cheese
    ½ cup shredded parmesan cheese

    What do you do?
    Heat one tablespoon oil in a large pan over medium high heat.
    Add your pepper, onion, and garlic. Sauteing until the garlic is fragrant.
    Add your ground beef, and cook until no longer pink.
    Add water, dressing, and sauce.
    Bring to a boil and add your noodles.
    Cover and cook on medium low heat 10-15 minutes or until your noodles are tender. Stirring occasionally.
    Remove from heat, sprinkle with cheeses, cover, and let stand 5 minutes or until the cheese is melted.

        I will pull out all the stops and make lasagna once a year. But, I have no idea why, because this tastes the exact same, with far less time and effort! 🙂 Btw, love that your son is watching Garfield! I love old school shows like that!
