As I sit here typing this, the house is silent except for the random scribbling of pencil across paper, as Kelsie is doing her school work for the day. The dogs are silent, and even though we live on a busy street, there doesn’t seem to be the steady stream of cars going by. Throughout all this silence, all I can do is think. Things have been unsettled here over the past month or so. My car wants to start some of the time. We think it’s the ignition going bad, but aren’t positive. We paid to have a sensor replaced, that the car guy thought was probably the issue. It wasn’t. So sometimes it will start right up, sometimes it won’t. And guess what…it won’t do it when we take it in to the shop! (story of my life)

Kayla’s car had to have the starter replaced. She depleted her savings to do so. Our internet went wonky, and dropped speed, which resulted in our internet company to come out to the house. It’s just all small things, but it leaves one to think, what’s next? Like, what else could go wrong?

All the while, while I’m thinking about these things, I keep telling myself that we’re blessed. Sure, we’re having some minor (seriously minor compared) issues. But, thankfully we aren’t in Texas, where things are much worse. I mean we live along the gulf coast. We could have a hurricane come through at any time during the season, and leave the ocean inside our home. It’s possible. At least we have vehicles. A lot of people lost theirs in the floods. At least we have a rough over our heads. A lot of people are left without even that. So while, I think about the bad going on in my own life, I always try and think, it could be worse. It’s all about perspective.

For now though, in the silence, I’m going to focus on telling y’all how juicy this sausage is, and how perfectly matched up the sweet potatoes and asparagus are. This Sheet Pan Sausage, Asparagus, and Sweet Potato has all of my favorites. Sausage, because I’ve really been cooking a lot of one pan dishes with it lately. Asparagus, because when it’s roasted like this, it tastes amazing! Sweet potato, oh, how I adore you!

This dish is done is less than 20 minutes! 20 minutes, y’all that is crazy quick. When I start this dish, I have just enough time to rotate some laundry around, and maybe fold a load, because the timer is going off, and my house smells awesome. A quick kitchen clean up tip – always line your pans with foil or parchment paper. My choice is always parchment paper, because I do find with foil, you have to spray it with non-stick cooking spray. But either way, virtually no clean-up. Which makes whoever cleans up the kitchen happy.

If you aren’t fans of sweet potato – shocking, to me, but Kayla actually doesn’t like sweet potato. You can totally sub it for red potatoes. Not an asparagus fan? Go with green beans – whole and fresh is what I would choose. Sheet pan meals can rarely be messed up. You can swap out proteins, starches, and veggies to your family’s taste preferences. You can also change up the herbs and spices, depending on what your going for.

Sheet Pan Sausage, Asparagus, and Sweet Potato

Sheet Pan Sausage, Asparagus, and Sweet Potato

Yield: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

This Sheet Pan Sausage, Asparagus, and Sweet Potato is ready in less than 20 minutes. Flavor packed with herbs, it's a healthy meal that is perfect any night of the week. 

Ingredients

  • 1 package Kiolbassa Smoked Meats brand sausage, sliced into 1/2 inch rounds
  • 1 bunch asparagus, cut in half, using the top half only
  • 2 cups diced sweet potato, small dices, to cook faster
  • 2 tablespoons olive oil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1/2 teaspoon rosemary
  • salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment paper. If using foil, you need to spray it down with some non-stick spray.
  2. Place the sausage, sweet potato, and asparagus onto the line pan. Set aside.
  3. In a small bowl whisk together the olive oil, and seasonings. Pour onto the sausage, sweet potato, and asparagus. Toss to coat evenly. Bake for 20 minutes.

    Reflecting on the hurricane and what everyone is Texas is going through really helps put things in perspective, doesn’t it? I’ve been thinking the same thing about some different situations I’m going through and they all pale in comparison. I have so much to be thankful for.

    This dish looks amazing and I love anything with sausage and sweet potatoes. Plus my husband is a huge fan of asparagus, so I’m going to pin your recipe to try this fall.

    Right now I’m listening to the Tampa radio station and they’re talking about Naples getting the storm. We were supposed to go to the shore off of Georgia this coming weekend. Luckily we aren’t there and we’re safe at home. Yes! We should be thankful and as I listen to all that is going, it makes me appreciate what we have.
    And having hot food like the sheet pan with sausage, asparagus, and sweet potatoes sounds wonderful. It is nice to throw all ingredients in one pan and then having it cook at once.

INGREDIENTS:
1 2/3 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons water
1 teaspoon Rodelle Peppermint Extract
1 cup semi sweet chocolate chips
4 ounces white chocolate
soft peppermint candies crushed for sprinkling

INSTRUCTIONS:
1. Preheat oven to 350 degrees. Line baking sheets with parchment paper, set aside.

2. In a medium bowl combine the flour, baking powder, and salt. Set aside.

3. In a large bowl, attached to a stand mixer, cream together the butter and sugars.

4. Add the water and peppermint. Combine.

5. Add the dry ingredients and mix until combined.

6. Fold in the semi sweet chocolate chips.

7. Form dough into balls, about 1 rounded tablespoon each.

8. Place 2 inches apart on baking sheets and bake for 10 minutes.

9. Allow to cool for 5 minutes before removing to cooling racks to completely cool.

10. Once completely cooled, crush those peppermint candies, and melt the chocolate, according to the directions on the package.

11. Dip one half of each cookie into the melted white chocolate, and then sprinkle with the crushed peppermint puffs. Allow the chocolate to harden up before storing. .

2 sticks butter, room temperature
1 cup sugar
1 egg, seperated
2 cups flour
4 teaspoons cinnamon
22 pecans 
INSTRUCTIONS:
1. Preheat oven to 375 degrees. Butter an 11X9 inch baking pan and set aside. 
2. In a small bowl mix together the flour and cinnamon together. Set aside.

3. In a mixing bowl attached to a stand mixer, cream together the butter and sugar for 2 minutes, or until light and fluffy. Add the egg yolk, beat until mixed. 
4. Slowly add the flour cinnamon mixture until a soft dough forms. 
5. Press the dough into the bottom of the pan evenly. Use your fingers/hand or the bottom of a glass. 
6. Place the pecans on the dough, leaving enough room to slice into squares. (don't slice them yet) 
7. Whisk the egg white up and brush the top of the dough and pecans with the egg white. 
8. Bake for 10 to 12 minutes. Allow to cool for about 8 minutes. Slice into squares, with the pecan in the center of each. Continue to cool in the pan until completely cool. .

2 3/4 cup flour
2 teaspoons cream of tatar
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 cup butter, melted
1 cup sugar
1/3 cup light brown sugar
1 egg
2 teaspoons vanilla extract

FOR ROLLING:
1 /2 cup sugar
2 teaspoons Rodelle Mulled Spicing Blend
1/2 teaspoon cinnamon 
INSTRUCTIONS:
1. Whisk together the flour, cream or tartar, baking soda, cinnamon and salt together. Set aside.

2. Whisk together the melted butter, sugar and brown sugar together.

3. Whisk in the egg and vanilla.

4. Stir in the dry ingredients until totally combined.

5. Cover and chill for 45 minutes.

5. Stir together the sugar, wassail spices, and cinnamon together in a small bowl. Set aside.

6. Remove from the fridge, preheat the oven to 350 degrees, and line baking sheets with parchment paper.

7. Roll 1 tablespoon of dough into balls, and then into the sugar mixture. Place onto the baking sheets 2 inches a part. Bake for 10 minutes, or until the edges are starting to brown.

8. Remove from the oven and allow to cool on the baking sheets for 5 minutes, before removing to finish cooling on cooling racks. .

1 pound thick cut bacon
1 package little smokies
1/2 cup brown sugar
1 1/2 tablespoons chili powder

INSTRUCTIONS:
1. If making these to bake now, preheat oven to 375 degrees. Otherwise, do this when you're ready to bake them.

2. In a small bowl mix together the brown sugar and chili powder. Set aside.

3. Line a baking sheet with foil. 
4. Measure out how much bacon to roll for each little smokie. I got about three little smokies per slice of bacon. It's gonna depend on the thickness of the bacon, etc. 
5. Roll the little smokie up, secure with a tooth pick and thoroughly coat with the brown sugar mixture. Place on baking sheet, and repeat until you've rolled all the little smokies up. If you have extra bacon, just coat it with the brown sugar mixture and bake it as well. So good!! 6. When ready to bake, bake for 25 to 30 minutes, or until the bacon is crisp along the edges. .

3 cups extra sharp cheddar cheese, shredded

1/2 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
dash or salt and pepper

INSTRUCTIONS:
1. Preheat oven to 350 degrees, and line a large sheet pan with parchment paper.

2. In a large bowl combine all of your ingredients, and mix until they are just combined.

INGREDIENTS
1 (8 ounce) block cream cheese, softened to room temperature
2 tablespoons mayonnaise
1/2 teaspoon garlic salt
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
1 (2 ounce) package dried beef, thinly chopped
1/4 cup thinly sliced green onion
1/3 cup poppy seeds

INSTRUCTIONS:
1. In a medium bowl attached to a stand mixer with a paddle attachment, beat the cream cheese on low for 1 to 2 minutes until nice and creamy. 
2. Add the mayonnaise, garlic salt, Worcestershire sauce and lemon juice. Mix until combined.

3. Add the dried beef and green onion, mix until combined.

4. Dump out onto plastic wrap, form into a ball and place in the fridge for at least 2 hours. The longer the better, so the flavors have time to come together.

5. Before serving, unwrap the ball and roll into the poppy seeds, carefully coating all sides. .

1 can crescent rolls
1 package little smokie style sausage
1 egg, beaten
everything bagel seasoning 
INSTRUCTIONS:
1. Preheat oven to 375 degrees. 
2. Separate crescent dough into triangles, and slice into smaller triangles. Place little smokies at wide ends of triangles and roll up.

3. Place on an ungreased baking sheet. Combine egg and water; brush over rolls. Sprinkle bagel seasoning over tops; press lightly into rolls.

4. Bake 12-15 minutes or until golden brown. .
