We were dabbling in the Whole30 realm a few short weeks ago. I decided to go after something that would crush my, as they call it "sugar dragon". I have one heck of one I'll tell ya! He is fierce and makes me crave sweets all day every day. Having a food blog does not help, because seeing the thousands of sweet offerings across Pinterest screaming to be remade into allergy friendly creations, it's super hard to say no!
Back to Whole30...so you can look it up because I am not about to go into all the details, and if your really interested, you should just read the book. It's a plethora of information. We did it about 2 weeks until we caved and had a dinner non-compliant. And I was ok with that. But this hash was something I would fix up on Sundays and we would have it every morning for breakfast along side some sort of eggs. I still make it today because who doesn't love a "whole" breakfast during the week?! I don't know about you but I would much rather eat this then cold cereal any day.
Yes, this is Whole30 friendly! Yay you! As long as you pair it with eggs for the protein, because one serving of this is not enough to count as your protein, and there is no added sugar in the sausage!! Nada, none, zilch!
What do you need?
1 pound ground sausage
6 medium potatoes, peeled, washed, and cubed
1 large yellow onion, thinly sliced
4 tablespoons extra virgin olive oil
salt, pepper, onion powder, garlic powder, (your favorite blend of seasonings)
What do you do?
Preheat your oven to 350 degrees. Line a large baking sheet with parchment paper.
Toss your cubed potatoes with seasonings and olive oil.
Place your potatoes in a single layer on the parchment lined baking sheet.
Bake your potatoes for 45 minutes, turning once during the baking time.
While the potatoes are baking, brown your sausage in a large skillet over medium heat. Remove the sausage from the skillet, leaving behind the grease.
Place the onions in the grease and cook over medium heat until they are translucent.
Return the sausage to the skillet and stir to combine.
When the potatoes are cooked, remove and place them in the skillet with the sausage and potatoes.
It's ready to serve or you can place in a large covered container and place in the refrigerate or the week. This can easily be reheated in the microwave.
