Y'all, it has been so hard to figure out how to cook for just 3 people. Ever since Kayla joined the Navy, and left for boot camp, I have struggled to do dinner.
I am finding that all of my recipes feed 4 to 8 people, which was perfect for us, because we were a family of 4, and there was plenty for leftovers for lunch the next couple of days. Now when I make dinner, I have too much left over, and I end up tossing it out. I.loathe.food.waste.
To keep food waste to a minimum I've been trying to make dishes and freeze half of it. It's been working out fairly well for the most part. Plus it really makes our crazy busy nights much easier. I can just pull something out of the freezer the night before, pop it in the fridge to thaw, and warm it up the next night for dinner.
Who knew that summer nights were going to be just as busy as the rest of the year. I thought summer was for relaxing...apparently not when you're on the swim team.
Swim team is a year round thing. They practice all year long. Unlike dance, where it's only on during the school year. We are at the pool every night of the week. Kelsie loves it though, and as long as she's loving it, and I can figure out something for dinner that won't have us eating at 10pm, I'm good. I guess it's probably time for me to get an Instant Pot!
So what does summer, swim practice, and freezing meals have to do with these Philly Cheese Steak Sloppy Joes?
Well, I make this, half it, and freeze one half of it for those swim nights that I didn't prepare dinner beforehand.
Last summer I created a Philly Cheese Steak Pasta Skillet that had rave reviews from the girls, and Zack. Y'all must have liked it as well, because it's been shared over a thousand times! (thank you!!) I was scrolling through Pinterest recently and saw the idea for sloppy joes and thought, "now that is interesting."
It was one of those thoughts where, it really was just an interesting idea, but I wasn't quite sure how it would turn out. I wrote down the idea, and tossed it out at Zack, with like so many recipes that I've pitched to him, he wasn't so sure about it.
Of course those are the ones that always turn out so great, so I knew that I had to take my Philly Cheese Steak Pasta Skillet and turn it into Philly Cheese Steak Sloppy Joes!
Y'all, I'm glad I did, because this is a winner. It's so easy to make, you don't need to do anything complicated, and it freezes well, OR you could just half the recipe. Either way you choose to make and serve this, it's gonna be a hit!
Philly Cheese Steak Sloppy Joe's ingredients:
- ground beef
- butter
- onion
- bell pepper
- steak seasoning
- ketchup
- worcesthersire sauce
- beef stock
- corn starch
- smoked provolone cheese
How do I make Philly Cheese Steak Sloppy Joe's in the Slow Cooker?
Add all the Ingredients (except for the cheese and buns) to the slow cooker and cook on low for 4 hours.
Add the cheese at the 4 hour mark, stir to combine, pop the lid back on for another 20 minutes.
Philly Cheese Steak Hamburger Helper?

Cooking for lesser people, that is when there are only 2-3 people to cook for does turn into a dilemma of sorts. Especially dinner is when "what to have?" questions pop up. This is indeed a quick an convenient dish as an answer to these kinds of questions.
