    Perfect Pico de Gallo

    The perfect topping for any Mexican dish is Pico de Gallo. Not just any pico will cut it though. The tomatoes have to be the perfect ripeness, and the jalapeno has to have the right amount of heat, and the cilantro has to be fresh! In this pico, if you have the freshest ingredients to start with, you will come away with the perfect Pico de Gallo that closely resembles the topping from your favorite Mexican restaurant that you love so much.

    What do you need?
    1 ½ cups diced tomatoes
    ¼ cup diced red onion
    1 tablespoon seeded and diced jalapeno
    2 tablespoons minced cilantro
    juice from 2 limes
    salt and pepper to taste

    What do you do?
    Mix together all your ingredients and place in an air tight container.
    Refrigerate for at least 2 hours before serving.

      This looks like heaven! I planted 57 different varieties of tomatoes in my garden this year, so this really is something I can see myself needing sooner rather than later! Tomatoes are kind of my summer obsession!

      I made this pico recipe last night to go with fajitas and it was SO delicious! I doubled the recipe for my family and my sister said it was the best she had tasted ... and I agree:) It took me a little bit to chop everything up, but besides that, the recipe was so easy to make! I definitely plan on making it again! Thank you so much for sharing .... such a wonderful delicious recipe and I highly recommend it to everyone else out there.
