Peach Crumble

Have you ever been through Clanton Alabama on Interstate 65? Did you notice the giant water tower at the Clanton Lay Dam exit, that just so happens to be shaped, and painted like a giant peach? Why would they do that, you ask? Because, Georgia isn't the only place known for it's peaches! Chilton County peaches are divine! They are juicy, sweet, and down right, almost perfect.

We were lucky to get our hands on some from a friend of Zack's at work. Zack ask me if I wanted some and I said, "of course!" I had a few things in mind that I wanted to do with them. Peach ice cream was one thing, and this peach crumble is the other.

I love pie, any and all kinds! But unless you cheat with a store bought crust, I sometimes want short and sweet and this is just that. This crumble is just like a pie, without the shell, but with a big bonus of a sugar cookie like topping! I know, right?! This features the same topping that we use on our Strawberry Rhubarb Crumble and it's perfect.

Aren't those peaches beautiful!? Of course you should buy extra peaches, because you know your going to want to eat one, or three while waiting on your crumble to bake.

What do you need?
6 cups peaches, cut into ½ inch wedges
¾ cups sugar
1 cup flour
1 cup light brown sugar
1 teaspoon vanilla
1 stick butter, cut into chunks
Juice from one lemon
4 teaspoons cornstarch
½ teaspoon salt

What do you do?
Preheat oven to 375 degrees.
To make the filling your going to combine the peaches, sugar, lemon juice, vanilla extract, and corn starch.
Transfer to an 8X8 inch baking dish.
To make the topping your going to mix together, with your hands, the flour, salt, brown sugar, and butter.
Once you get a wet sandy texture your going to crumble it evenly over the peaches in your baking dish.
Bake for 30 to 45 minutes or until your crumble is a golden brown and your peach mixture is bubbly.
Cool before serving.

This is delicious alone, but killer when paired with vanilla ice cream!

    This looks divine! I absolutely love peaches and crumbles are much more enjoyable for me to create than pie. I hate making pie crust. We'll have to try this once I can get my hands on some fresh peaches. Yum!
