To me, carrots have always been a quick and easy snack. Grab some baby carrots and the ranch, dip and munch.
However, years ago, Kelsie went to a little friends house, and her momma made brown sugar carrots, as a side to my sloppy joe's. Kelsie was in love, and requested them quite often there after.
I still didn't really make them, because for some reason, every time I tried, they just didn't turn out the way I had envisioned.
She eventually took over making those brown sugar carrots, and they were always much better when she made them.
We were in Lucky's one day and ran across rainbow carrots, and she wanted to buy those to try out, but wanted me to make something fancy, since those carrots looked fancy.
So Orange Maple Roasted Carrots were born. These are so good, and I make them at least once a week. They are perfect for a quick weeknight side, or the holiday table.
What carrots are best for roasting?
Any! We really like the presentation of rainbow carrots for holidays, but stick to the plain old orange on weeknights.
Do you have to peel carrots when roasting?
No. As long as you scrub them with a vegetable brush, they are fine to consume, with the peel.
What is the best oil to use for roasting carrots?
Olive oil is a great choice and so is ghee. I usually use olive oil.
Do I need oil when roasting vegetables?
Not really. But it will take them longer to cook and brown up.
Can roasted carrots be frozen?
Yes. Cool completely, wrap in foil, and place into a freezer safe zip top bag.
How do you reheat frozen roasted carrots?
You can place them into a 350 degree oven for 20 minutes, until they are heated through.
Or you can place them in the microwave, for a couple of minutes, until heated through.
You can also toss them into a pan on the stove top, with a little bit of oil, until heated through.

Orange Maple Roasted Carrots
These Orange Maple Roasted Carrots are an easy and delicious side dish that everyone will love. Ready in 20 minutes, and only requires 6 ingredients.
Ingredients
- 2 pounds rainbow carrots, peeled
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon pepper
- ¼ cup honey
- ¼ cup orange marmalade
Instructions
- Preheat oven to 425 degrees. Line a baking sheet with foil.
- Lay the carrots on the foil, and drizzle the oil over them.
- Season with salt and pepper, and toss to coat.
- Roast for 12 minutes, or until tender.
- While they are roasting in the oven, whisk together the maple syrup and orange marmalade.
- Remove from the oven, and brush the maple orange mixture all over the carrots, turning to coat.
- Place back in the oven and roast for another 6 minutes, or until a little browned.
- Remove from the oven, and serve.
