My husband eats a lot of leftovers for lunch each week. I usually over cook, I hate wasting food, and I myself don’t eat leftovers, unless it’s a casserole, so he gets the majority of the dishes. At times I get a little creative with our leftover meal and will create something that doesn’t resemble the previous night’s dinner at all. This dish is one of those!
When we are talking leftovers for lunch, I like to make sure that what it’s served in doesn’t come back home. This is simply because over the years too many containers have been left behind in the office, thrown out (by accident), or stained from sauces so bad that nobody really wants to reuse them, not to mention that a few even retain odors (yuck!). Like the name says, you just heat and eat from the containers. These containers are perfect for almost any leftover meal, just not anything like soup, or meals that contain too much sauce.
So let’s talk about how easy this Leftover Meatloaf and Potatoes Transformed into Shepard’s Pie is to make. Whatever your favorite meatloaf is, whatever mashed potatoes you have on hand, some vegetables, and 1/4 cup shredded cheese is all you need.
You want to mix together one cup of meatloaf crumbles (just meat loaf crumbled up) and 1/4 cup of your favorite vegetable, in my husband’s case, this is green beans.
Toss this into your Reynolds™ heat & eat disposable container. Sprinkle with the 1/4 cup cheddar cheese.
Top it off with your mashed potatoes.
Cover and store in the fridge until your ready to transport, heat, and eat it. When your ready to heat it up, it’s so simple, place in the microwave (without the lid), and heat until heated through. Serve straight from your container, and toss when your done! Simple.
