One day my husband was talking about the Crunchy Taco from Hamburger Helper and how much he missed it. I got online and found a recipe in no time from Iowa Girl Eats. We've made it several times since and it's delicious! Still a quick, simple, throw together meal for busy weeknight afternoons.
Ingredients:
- Ground Beef
- Onion
- Taco Seasoning
- Salsa
- Chicken Broth
- Rice
- Cheddar Cheese
- Toppings (optional):
- Tortilla Chips
- Avocado Slices
- Guacamole
- Extra Salsa
- Shredded Lettuce
- Sour Cream
- Diced Tomatoes
- Fresh Cilantro
How do you make Homemade Hamburger Helper Crunchy Taco?
- Brown the ground beef and onion together. Drain any fat.
- Add the taco seasoning packet, salsa, and chicken broth. Bring to a boil.
- Stir in the rice. Cover, and simmer on low for 15 to 20 minutes, or until rice is cooked through.
- Remove and stir in cheddar cheese.
- Serve with your favorite toppings.
Recipe Tips + Substitutions:
Before stirring in the cheese, add a can of drained and rinsed black beans or a can of corn (drained.)
Instead of salsa, you can add ¼ cup diced tomatoes with the juice and ¼ cup green chilies.
Try using salsa verde in place of the regular salsa and ground chicken or turkey instead of ground beef.
I like using Jasmine or Basmati Rice. If you use brown rice, you will need 2 cups of chicken broth.

- 1 pound ground beef
- ½ small onion, chopped
- 1 taco seasoning packet
- ½ cup salsa
- 1 ¾ cup chicken broth
- 1 cup rice, such as Jasmine or Basmaiti
- 1 cup shredded cheddar
- Toppings of your choice - see post for some ideas
Instructions
- Brown your ground beef with your onion in a large skillet and drain the grease off.
- Add the taco seasoning, chicken broth, and salsa {if no allergies}, and bring to a boil.
- Add your rice, cover, and reduce heat to low.
- Simmer for 15-20 minutes or until your rice is cooked through.
- Remove from heat, stir in cheddar cheese until melted.
