This Grilled Zucchini can be made on your grill outside or you can grill it up indoors! Either way, it will be ready in 10 minutes or less!

If you’ve walked out into your back yard lately, you’ve probably realized that summer is upon us. The scents of neighbors grilling, the sounds of kids playing, and the feel of the heat and humidity on your skin; yep, it’s summer! Although not by the calendar, I think summer officially starts when you have all of those present.
We bought gas for our grill and we’ve been outdoors cooking meals for the past couple of weeks. I like to stay out of the kitchen as much as possible during the summer, because the heat from the stove/oven is awful. When I mentioned BBQ chicken the other night for dinner, I knew that I wanted to make some sort of grilled side dish. I was thinking corn, because grilled corn is mighty tasty. However, with Kelsie’s corn allergy, I knew that I would have to find something else. I never would have thought to grill zucchini on it’s own, because y’all know, if you’ve been here long, veggies aren’t really my thing. I am trying!
This grilled zucchini though, hmmm, yum! It turned out so good, and it was the perfect side dish to our BBQ. It literally cooked in 5 minutes, but I was outside on the grill with Zack. He was cooking the chicken, and I took over the zucchini. We loved this, and there wasn’t a slice leftover!
If your inside with a grill pan, I imagine this may take longer than 5 minutes, depending on how hot you have it heated up. However, heat that grill pan up, if you don’t have a grill outside! It’s gonna taste great either way!

- 2 large zucchini sliced 1/2 inch thick
- 1/4 cup canola oil
- 1 tablespoon minced garlic
- 1 teaspoon Italian Seasoning
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper to taste
- In a large bowl mix together everything except the zucchini.
- Toss zucchini in the "sauce".
- Cook on a grill for 3 to 4 minutes per side. You don't want to cook them until their mushy, you still want some crunch. Cooking times may vary depending on the temperature of your grill.
If your cooking on a grill pan inside, I would cook over high heat for a minute or two per side.
