Donuts that are gluten free, but still have the same cake like texture as regular donuts is hard to come by, unless you are using the right ingredients.
I'm learning slowly which gluten free flours work and which ones don't. With my trial and error, y'all get to reap the benefits.
Until I really started baking on a weekly basis, I used to think the only way to get fluffy donuts was to use a yeast dough. That's totally not the case, as I've proven in this recipe.
I've been making donuts now for years, and they always turn out fluffy and perfect. I've never tried frying any of my from scratch donuts. I've only ever fried the canned biscuit donuts.
One thing worth mentioning is the choice of spices. Make sure that you are using fresh spices! Check those dates.
I tossed an older bottle of cloves that I found hiding in the back of my cabinet.

I love using my Rodelle Organic Ceylon Cinnamon over other cinnamon. It has a sweeter more delicate flavor than cassia, which is found in most other varieties.

How are these gluten free?
I used Bob's Red Mill Gluten Free 1 to 1 Baking Flour. I have not tested this recipe with other gluten free flours, BUT I can say that I've tried baking with other gluten free flours, and this is the only one that I can get to turn out fluffy baked goods that mimic that gluten counterparts.
Can I fry these donuts?
Like I mentioned above, I've never tried frying any of my donut recipes. With that being said, fry at your own risk. And if you do decide to fry, and they turn out, come back and tell us!
Is there another option besides the glaze?
Yes! My original recipe actually doesn't call for glaze, but a cinnamon sugar mix. You'll need ½ cup melted butter and 1 ½ cups sugar and 2 teaspoons cinnamon.
Mix together the cinnamon and sugar in one bowl. Dip the cooled donuts into the butter, coating the entire donut, and then dip into the cinnamon sugar mix, again, coating the entire donut.

Ingredients
Donuts
- 1 ¼ cup apple cider
- 2 cups Bob's Red Mill Gluten Free 1 to 1 Baking Flour
- ¾ teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon Rodelle Ceylon ground cinnamon
- ¼ teaspoon ground cloves
- ¼ teaspoon salt
- 1 egg
- 2 tablespoons butter melted
- ½ cup brown sugar
- ½ cup sugar
- ½ cup buttermilk
- 1 teaspoon vanilla extract
Glaze
- 3 tablespoons milk
- 1 cup powdered sugar
- 1 teaspoon Rodelle Ceylon ground cinnamon
Instructions
1. Preheat oven to 350 degrees and grease 2 donut pans.
2. In a large bowl whisk together your egg, and sugars. Pour in the buttermilk, apple cider, and vanilla extract.
3. In another bowl mix your flour, baking soda, baking powder, salt, and spices.
4. Pour the dry ingredients into the wet, and using a spatula mix until just incorporated. You do not want to over mix.
5. Pour the batter into a gallon zip top bag, and snip off the corner. Pipe the batter into the pan, filling ½ to ¾th's full.
6. Bake for 10 minutes. Allow to cool completely before dipping into the glaze.
7. To make the glaze whisk together the ingredients in a bowl. Dip the tops of the donuts into the glaze, and allow the excess to drip off. Set aside on parchment paper and allow the glaze to fully harden.
Notes
Store in an airtight container. Best when consumed within 3 days.
