Nothing says summer like fresh peaches - and these Fresh Peach Scones & Vanilla Bean Glaze are the perfect summer breakfast or sweet treat!
I don't know about you but I am loving all the fresh summer fruit that's available right now. I am trying to keep our fridge and counter top full of fresh summer fruits, and peaches happen to be one of my summer favorites, behind watermelon of course!
Nothing can beat a really great ripe peach. It's sweet, and soft, but not too soft, and it's perfect to munch on as is, or turn into desserts and treats, like these Fresh Peach Scones!
I may have mentioned last week that I love scones, when I posted my Lemon Scones..did you miss that one? You have to hurry back and check it out, if you love lemon. Because they are sweet and tangy, and oh so lemony!
Of course you can make lemon scones year round...but peach scones can really only be made with fresh peaches. A canned or frozen peach just won't cut it. You need to search out one that when squeezed ever so slightly there is a little give to it.
This is going to give you the most perfect flavor ever. You also want to taste your peach before popping it into this batter. If it's not perfectly sweet, grab another one and try it out.
You can snack on the one that you taste tested that didn't quite make the cut for scone batter. Drizzle honey over it, and you've got a great little snack!

Let's talk about that vanilla bean glaze...Since I'm a Rodelle Ambassador, I am super lucky enough to have their products in my baking supplies, which means I get a chance to try out some really great products.
I think one of my most favorite is the Vanilla Bean Paste. It is so versatile. You can use it in so many recipes, and it makes a killer ice cream!
I try and use it in place of vanilla a lot. Of course there is a little learning curve, as this adds some sugar to the recipe, so you sometimes have to adjust accordingly. It's that whole baking is a science thing. 😉
I added the Vanilla Bean Paste in the batter of these scones, and into the glaze, because in my book, you can never have too much vanilla bean flavor! I really think this balances quite well with the peaches, and it gives the scones a really nice hint of vanilla, that extract just wouldn't do.
These Fresh Peach Scones & Vanilla Bean Glaze are perfect with your morning coffee, and as a matter of fact, I just finished one off with my third cup of morning coffee.
Zack and Kelsie had one last night before bed, because they also make the perfect sweet, but not too sweet bedtime snack.
Whip up a batch of these for a great summer morning breakfast, or the perfect treat to enjoy with that cup of whatever after you come in from the pool.
How do you make scones:
First, whisk together the egg, buttermilk, sour cream, and vanilla bean paste together in a small bowl. Set aside.
Next, whisk the flour, baking powder, salt, and brown sugar together. Using a pastry cutter, mix in the butter until you have a wet sandy texture.
Pour the wet mix into the dry, and stir to combine with your hands or a spatula.
For Fresh Peach Scones, you'll fold in the peaches carefully. Mix to combine.
Drop the dough onto a floured surface, and flatten into a 7 inch round disk.
Slice into 8 pie slices, and bake until golden brown.
Cool completely. Then mix up the icing, and dip the tops right in!
Tips for perfect scones:
Cold butter! Make sure to pop your butter into the freezer for about 5 minutes while you pull out the rest of your ingredients.
Don't over work the dough! The more you stir, the more gluten is released, and the tougher your dough is going to be. You want to stir everything until it's just combined.
Can I use frozen peaches?
I haven't tried making these with frozen peaches. I would be worried that they would contain too much water.

Ingredients
- 2 cups plus 2 tablespoons flour
- 1 tablespoon baking powder
- ½ teaspoon salt
- ⅓ cup brown sugar
- 1 stick butter, cubed, and cold
- ¼ cup buttermilk
- ¼ cup sour cream
- 1 egg
- 2 teaspoons Rodelle Vanilla Bean Paste or Vanilla Extract
- ½ cup fresh diced peaches I did peel mine.
Vanilla Bean Glaze
- ½ cup powdered sugar
- 2 teaspoons Rodelle Vanilla Bean Paste or Vanilla Extract
- 3 tablespoons heavy whipping cream
Instructions
- Preheat oven to 400 degrees, and line a pizza pan with parchment paper. Set aside.Whisk together the egg, buttermilk, sour cream, and vanilla bean paste together in a small bowl. Set aside.
- In a large bowl, combine the flour, baking powder, salt, and brown sugar. Using a pastry cutter, mix in the butter until you have a wet sandy texture.
- Pour the wet mix into the dry, and stir to combine with your hands or a spatula.
- Gently fold in the peaches.
- Drop the dough onto a floured surface, and flatten into a 7 inch round disk.
- Slice into 8 pie slices, and place onto parchment lined pizza pan. Bake for 15 to 17 minutes, or until golden brown. Remove from the oven, and place on a cooling rack to cool completely.
- Once cooled, whisk together the ingredients for the glaze, and dip the tops of the scones in. Allow the glaze to set up before serving.
