Our family loves quesadillas. Years ago we used to go to Taco Bell all the time, just to get quesadillas. Yea, I know, they aren't an authentic restaurant...Blah blah. It's ok though, because we no longer go there, and we choose to make these babies at home now.
Homemade is always better, and that is SO the case with these Spicy Cheesy Chicken Quesadillas.
Spicy Cheesy Chicken Quesadilla ingredients:
- chicken breasts
- shredded cheddar cheese
- tortillas
- mayonnaise
- sugar
- cumin
- cayenne pepper
- garlic powder
- salt
- jarred jalapeno slices
Optional ingredients that you can add to quesadillas:
- diced onion
- chopped bell peppers
- fresh cilantro
- fresh garlic
- black beans
- corn
- shredded beef (instead of chicken) This beef from our Crock Pot Shredded Beef Tacos would be perfect.
- sliced steak (instead of chicken)
What's the best kind of cheese for quesadillas?
- cheddar
- colby jack
- pepper jack
- asadero (this is a more authentic Mexican cheese)
How do I make chicken quesadillas?
- Mix together the mayonnaise, sugar, cumin, cayenne pepper, garlic powder, salt, minced jalapeno slices and the juice together. Cover and place in the fridge until ready to use.
- Cook your chicken. You can boil and shred this, use leftover chicken, or rotisserie chicken. I happen to have cooked 2 chicken breasts in the air fryer using a Mexican seasoning.
- Preheat a large non stick skillet or griddle over medium heat .
- Assemble your quesadilla: lay your tortilla out, layer some of the jalapeno sauce on one half, sprinkle the sauce with cheese followed by some of the chicken. Fold the other side over, on top. Lay in the skillet or on the griddle, and cook on both sides until golden brown. About 3 minutes per side.
- Allow to cool for a couple of minutes before slicing.
- Serve with your favorite toppings. We really like guacamole and our Perfect Pico de Gallo.
What's the best way to reheat a quesadilla?
You can reheat these in the microwave, but the tortilla won't remain crispy. I like heating these back up in my Ninja Foodi air fryer on 375 degrees for 5 to 6 minutes.
You can also reheat in a 375 degree preheated oven for 10 minutes.

- 2 large chicken breasts cooked and shredded (about 2 cups)
- 2 cups sharp shredded cheese
- 6 flour tortillas
Sauce!
- ¾ cup mayonnaise
- 1 teaspoon sugar
- 1 teaspoon cumin
- ½ teaspoon cayenne pepper
- ¼ teaspoon garlic powder
- ½ teaspoon salt
- 3 teaspoons minced jarred jalapeno slices
- 3 teaspoons juice from jarred jalapeno slices
