Recreate a Taco Bell favorite with our chicken quesadillas with a spicy jalapeno sauce. Chicken Quesadillas kicked up with a spicy jalapeno sauce are the simplest, yet tastiest dinner recipe you can throw together in little to no time at all.
We used to be huge Taco Bell fans. I know, I know, we used to eat out there about once a month and the girls and I would always get the chicken quesadillas. We tried to replicate them at home, but at the time we weren’t aware of Kelsie’s food allergies so it was no big deal if I couldn’t get them to taste similar or not. Now, it’s a different story. That sauce on their quesadillas make them what they are. It’s not just chicken and cheese thrown together in a flour tortilla. It’s that sauce! I went on a quest hunting down recipes for the sauce. I found a couple, but nothing compared, until I started changing ingredients and playing with the measurements. That is when flavors melded together in an almost magical way.
What do you need?
3/4 cup Earth Balance Mindful Mayo
1 teaspoon sugar
1 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/2 teaspoon salt
3 teaspoons minced jarred jalapeno slices
3 teaspoons juice from jarred jalapeno slices
4 chicken breasts cooked and shredded
2 cups sharp shredded cheese
flour tortillas of your choice
What do you do?
Mix together all the ingredients for the sauce in a small bowl and set aside.
Heat a large non-stick skillet over medium to high heat.
Place a tortilla in the skillet and heat one side for about 30 seconds, flip and begin assembly.
Your going to spread 1 to 2 tablespoons of the sauce onto your tortilla, then a layer of chicken on one half, and then enough cheese to cover the chicken.
Fold the side without the chicken and cheese over the side with the chicken and cheese. Cook for a couple of minutes, checking to make sure the other side is to the doneness of your liking. Carefully flip and cook the other side a couple of minutes until the doneness of your liking.
Do this with the remaining sauce, chicken, and cheese.
**You can double and triple the recipe if your making more then about 5 quesadillas. Get creative, if you like spicy, throw in extra slices of those jalapenos when you add your chicken. If your making this for a crowd, save time and buy a whole chicken and shred the whole thing. You could just as easily assemble these all together and cook in the oven on 400 degrees, flipping once after the tops are to your liking.
