I am always trying to come up with unique dinner ideas. We get so stuck on the same thing; spaghetti, tacos, burgers, roasted chicken, etc. Honestly, it makes putting together a menu for two weeks boring.
I was going to put Philly Cheese steak Sloppy Joes on the menu but then decided to do something a little different. These Cheesy Enchilada Sloppy Joes is what I came up with.
These are The Best Cheesy Enchilada Sloppy Joes
Loaded with ground beef, enchilada sauce, onion, jalapeno, cilantro and pepper jack cheese!
I don't just use any old canned enchilada sauce though. I love Frontera Enchilada Sauce.(not sponsored, just buy and love this particular brand!) It's got a flavor like you can't find in a can! It's made with sun-dried chiles, roasted tomatoes and smoky garlic. See, told you, you can't find that in that normal can that most buy.
Ingredients in Enchilada Sloppy Joes:
- avocado oil
- ground beef
- onion
- jalapeno
- enchilada sauce
- cilantro
- pepper jack cheese
How do you make Cheesy Enchilada Sloppy Joes?
- Heat the avocado oil over medium heat in a large skillet.
- Saute the onion and jalapeno, until softened. About 5 to 7 minutes.
- Add in the ground beef, breaking it up as it cooks.
- Drain any grease from the ground beef, and pour in the enchilada sauce. Simmer for 5 to 10 minutes. Stir in the cilantro.
- Toast the buns, top with the seasoned ground beef, top with cheese, and place under the broiler, until the cheese is bubbly.
How do I make these gluten free?
The sauce is wheat free. Just make sure whatever sauce you choose that it's free of gluten.
Then use gluten free hamburger buns. We just discovered the best ones ever - that are soft on the inside and they don't contain corn syrup! I buy Canyon Bakehouse Gluten Free Hamburger Buns from the freezer section at my grocery store. You can also order them online.
Can I make these in the slow cooker?
Yes! Toss your ground beef, onion, jalapeno and enchilada sauce into your slow cooker. Cook on low for 6 to 8 hours. You'll want to stir this a couple of times during the course of cooking.
Turn the oven on to broil, and lay your buns on a sheet pan, insides up. Broil for a few minutes until they are toasty.
Stir in the cilantro. Top the buns with the meat mixture, place cheese on top, and place back under the broiler until the cheese is nice and bubbly.
Can I make these ahead of time?
Yes, you can make the meat mixture in advance and keep in the fridge for 48 hours prior to serving. Just heat up in a skillet over medium heat. Stirring occasionally until heated through.
This cooked meat mixture also freezes very well. Make it up and place in a freezer safe container. Thaw in the fridge for 24 hours prior to reheating.
