I want to apologize for not being around much since last Monday. I have good reason, and I don’t think you can truly relate, unless you’ve been in the same position. Kayla, my oldest left for boot camp on Monday the 2nd, and that last week I was a mess. Even though I know that this is the best thing she could do for herself, doesn’t make it any easier. She was hanging around a bad crowd here, failed out of her first semester of college, quit her job (after buying a brand new car), and was on the road to nowhere fast. I mentioned to her that she had to get her crap together because we were not going to support her. I gave her the option of the military, specifically the Navy, since my dad was in the Navy for four years right after high school. She spoke to a recruiter, went through a mess of trying to get in with waivers and such, she finally got approved, and was on her way.

It’s truly the not being able to speak with her or even text her to ask how her day is going that is really what hurts my heart the most. I just want to know something. I should be receiving a form letter any day now that has her address and graduation date on it. I’ll feel much better when I’m able to communicate, even if it’s only by snail mail. I also am working on a whole post on what I’ve learned while she’s been away at boot camp. It’s been a lot of information from random sources, so I thought I’d put it in one place, in hopes to help out other Navy moms! That post will be up soon. However, for now, let’s talk recipes, and specifically these delectable Brookie Cups!

Heading into the weekend like WOAH! Coming into the weekend with these brookie cups by your side, you will be prepared to take on any and everything. These brookie cups are chewy with perfectly crisp brownie edges. They are the best of both worlds, and if you love these two sweet treats apart, you’re going to love them even more together! The very best part of this recipe is…you’ll use a brownie box mix, and prepared cookie dough! Wha??! Yep. They are the simplest sweet treat ever. I used Annie’s Organic Chocolate Chunk Cookie Dough and Annie’s Organic Double Chocolate Brownie Mix. Of course you can use whatever brand cookie dough and brownie mix you want to use. We use Annie’s because of food allergies. Yucky corn syrup and soy bean oil is in just about everything premade. We won’t judge you for using the dough boy brands. Or, if you’re really wanting to go completely crazy in the kitchen, you can use your favorite recipes for the brownies and cookies. Just don’t bake them of course. You want the batter and dough! 🙂

Brookie Cups

Brookie Cups

Yield: 12
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Craving a brownie and a chocolate chip cookie, but can't decide which one you want? No worries! These Brookie Cups are the best of both worlds!  

Ingredients

  • 1 package of premade cookie dough
  • 1 boxed brownie mix, mixed up according to the directions on the box

Instructions

  1. Preheat oven to 350 degrees. Spray a muffin pan with non-stick cooking spray. Place a couple of pieces of the cookie dough in the bottom of the muffin cups. Pour brownie batter on top, about 1/2 full, and add some more chunks of cookie dough to the top. Do this until you have filled all 12 muffin cups up. Bake for 16 to 20 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes, before removing

    I make brownie cupcakes sometimes with a peanut butter cup pressed into the middle. But these brookie cups take brownies and chocolate chip cookies to a whole new level. Wow and yummy!

    I wish your daughter good luck. These brookie cups look so good I am not a baker by trade but the mix of bronie and cookie is a different cake and so great sounding.

    Oh gosh, I would eat SO many of these. They look and sound incredible. I am going to make them soon, which is probably dangerous right before swimsuit season.

    We have made cookie brownies (some call them brookies like you). They are a great combination of flavors and textures, and super yummy while slightly warm.

    I’m sorry, it’s not easy to let go of the kids and just be on the waiting end. It’s really nice to keep yourself busy. I think baking is a good therapy. These brookie cups look so good!

INGREDIENTS:
1 2/3 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2/3 cup butter, room temperature
1/2 cup sugar
1/2 cup brown sugar
2 tablespoons water
1 teaspoon Rodelle Peppermint Extract
1 cup semi sweet chocolate chips
4 ounces white chocolate
soft peppermint candies crushed for sprinkling

INSTRUCTIONS:
1. Preheat oven to 350 degrees. Line baking sheets with parchment paper, set aside.

2. In a medium bowl combine the flour, baking powder, and salt. Set aside.

3. In a large bowl, attached to a stand mixer, cream together the butter and sugars.

4. Add the water and peppermint. Combine.

5. Add the dry ingredients and mix until combined.

6. Fold in the semi sweet chocolate chips.

7. Form dough into balls, about 1 rounded tablespoon each.

8. Place 2 inches apart on baking sheets and bake for 10 minutes.

9. Allow to cool for 5 minutes before removing to cooling racks to completely cool.

10. Once completely cooled, crush those peppermint candies, and melt the chocolate, according to the directions on the package.

11. Dip one half of each cookie into the melted white chocolate, and then sprinkle with the crushed peppermint puffs. Allow the chocolate to harden up before storing. .

2 sticks butter, room temperature
1 cup sugar
1 egg, seperated
2 cups flour
4 teaspoons cinnamon
22 pecans 
INSTRUCTIONS:
1. Preheat oven to 375 degrees. Butter an 11X9 inch baking pan and set aside. 
2. In a small bowl mix together the flour and cinnamon together. Set aside.

3. In a mixing bowl attached to a stand mixer, cream together the butter and sugar for 2 minutes, or until light and fluffy. Add the egg yolk, beat until mixed. 
4. Slowly add the flour cinnamon mixture until a soft dough forms. 
5. Press the dough into the bottom of the pan evenly. Use your fingers/hand or the bottom of a glass. 
6. Place the pecans on the dough, leaving enough room to slice into squares. (don't slice them yet) 
7. Whisk the egg white up and brush the top of the dough and pecans with the egg white. 
8. Bake for 10 to 12 minutes. Allow to cool for about 8 minutes. Slice into squares, with the pecan in the center of each. Continue to cool in the pan until completely cool. .

1. Whisk together the flour, cream or tartar, baking soda, cinnamon and salt together. Set aside.

2. Whisk together the melted butter, sugar and brown sugar together.

3. Whisk in the egg and vanilla.

4. Stir in the dry ingredients until totally combined.

5. Cover and chill for 45 minutes.

5. Stir together the sugar, wassail spices, and cinnamon together in a small bowl. Set aside.

6. Remove from the fridge, preheat the oven to 350 degrees, and line baking sheets with parchment paper.

7. Roll 1 tablespoon of dough into balls, and then into the sugar mixture. Place onto the baking sheets 2 inches a part. Bake for 10 minutes, or until the edges are starting to brown.

8. Remove from the oven and allow to cool on the baking sheets for 5 minutes, before removing to finish cooling on cooling racks. .

1 pound thick cut bacon
1 package little smokies
1/2 cup brown sugar
1 1/2 tablespoons chili powder

INSTRUCTIONS:
1. If making these to bake now, preheat oven to 375 degrees. Otherwise, do this when you're ready to bake them.

2. In a small bowl mix together the brown sugar and chili powder. Set aside.

3. Line a baking sheet with foil. 
4. Measure out how much bacon to roll for each little smokie. I got about three little smokies per slice of bacon. It's gonna depend on the thickness of the bacon, etc. 
5. Roll the little smokie up, secure with a tooth pick and thoroughly coat with the brown sugar mixture. Place on baking sheet, and repeat until you've rolled all the little smokies up. If you have extra bacon, just coat it with the brown sugar mixture and bake it as well. So good!! 6. When ready to bake, bake for 25 to 30 minutes, or until the bacon is crisp along the edges. .

1/2 teaspoon oregano
1/4 teaspoon garlic powder
1/4 teaspoon onion powder

INSTRUCTIONS:
1. Preheat oven to 350 degrees, and line a large sheet pan with parchment paper.

2. In a large bowl combine all of your ingredients, and mix until they are just combined.

3. Form into 2 inch balls, and place on your lined sheet pan.

4. Bake for 20 to 25 minutes or until they are golden brown. .

INGREDIENTS
1 (8 ounce) block cream cheese, softened to room temperature
2 tablespoons mayonnaise
1/2 teaspoon garlic salt
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
1 (2 ounce) package dried beef, thinly chopped
1/4 cup thinly sliced green onion
1/3 cup poppy seeds

INSTRUCTIONS:
1. In a medium bowl attached to a stand mixer with a paddle attachment, beat the cream cheese on low for 1 to 2 minutes until nice and creamy. 
2. Add the mayonnaise, garlic salt, Worcestershire sauce and lemon juice. Mix until combined.

3. Add the dried beef and green onion, mix until combined.

4. Dump out onto plastic wrap, form into a ball and place in the fridge for at least 2 hours. The longer the better, so the flavors have time to come together.

5. Before serving, unwrap the ball and roll into the poppy seeds, carefully coating all sides. .

INSTRUCTIONS:

2. Separate crescent dough into triangles, and slice into smaller triangles. Place little smokies at wide ends of triangles and roll up.

3. Place on an ungreased baking sheet. Combine egg and water; brush over rolls. Sprinkle bagel seasoning over tops; press lightly into rolls.

4. Bake 12-15 minutes or until golden brown. .
